Agree. I once went on a 22 day carrot juice fast. The palms of my hands were bright orange. The rest of my looked like I was dipped in avery flashing slip! LOL

I have a great carrot bread recipe that uses that juice as the liquid. I add grated carrot and some grated ginger, too. Mmmmmmm.

Ginger Carrot Bread

3/4 cup sugar
1/3 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 cup carrot juice
1 1/2 cups all-purpose flour
3/4 teaspoon ground ginger
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup chopped toasted walnuts

Preheat oven to 350 degrees. Lightly grease a loaf pan. Set aside.
In a large bowl, whisk together sugar, oil, eggs, vanilla, and carrot juice. In a medium bowl, whisk together flour, ginger, baking powder, and salt. Add the flour mixture to the egg mixture, whisking just to combine. Fold in the walnuts.
Pour batter into prepared pan and bake until a toothpick inserted in the middle comes out clean, 45 to 55 minutes. Transfer to a wire rack; let cool in pan 10 minutes, then invert loaf onto rack to cool completely. Slice just before serving.

I also add about a half cup of grated carrot to the batter as well as some chopped crystallized ginger. Mmmmmm.

June, what was the goal of the fast? 22 days is a long time.

Karl, that was during my ashram days - ten hours a day of rounding meditation, yoga, chanting, etc. and carrot juice every 2 hours for 22 days. Had some great meditations, lost a lot of weight and turned orange all over! LOL
